Brewed for complexity and balance, our latest single-origin coffee comes from our growing partner in Chiapas, Mexico. Bright and full-bodied flavour, with layers of citrus, chocolate and nuts. Our growing partner Bercy has long practised an organic agroforestry approach, without the use of chemical fertilisers or pesticides.  Coffee plants are shade protected by over 300 trees such as Inga, Chalun, Guachipilin. And Fruit trees; Orange and Plantain.

Always serves a crowd pleaser with milk, or exceptional as an espresso.

Care & Brewing instructions

  • Store in an airtight container in a cool, dry place. Keep away from direct sunlight and heat sources
  • While our coffee can be consumed up to 12 months after roasting, we recommend using within 4-6 weeks of opening for optimal freshness, grinding just before brewing for best flavour.
  • We recommend using 17g of coffee per portion, roughly 2 heaped teaspoons.
  • For espresso, use a fine grind and 28-30 seconds extraction time, for a yield of 34g
  • For cafetierre use a medium/course grind. Add hot water 30 seconds off the boil. Stir after 30 seconds. Plunge after 5 minutes. Enjoy!

Taking over his family’s two-hectare parcela a decade ago, Bercy initially farmed traditionally, selling his harvest into undervalue, undifferentiated commercial streams. Five years ago, he initiated a radical quality intervention. By enforcing strict brix-level harvesting (leaving green fruit on the branch) and introducing rigorous, timed fermentations, Bercy elevated his family legacy into the specialty tier.

The foundation of this quality leap is a dense understory of 300 standing trees sheltering his heritage Bourbon shrubs. Inga and Chalún act as the farm’s atmospheric nitrogen pumps, while Guachipilín and Javoncillo deep-mine essential subsoil minerals to enrich the topsoil. Concurrently, interplanted Orange trees shed steady organic matter, naturally regulating soil acidity.

This lot bridges old-world varietal elegance with modern processing precision. Because Bercy allows only perfectly mature cherries into his tiled fermentation tanks, the cup highlights the delicate, sweet, and clean characteristics of legacy Typica. The multi-species root network gives the coffee a remarkably complex structural balance, offering vibrant citrus notes driven by the orchard-influenced topsoil, a silky body, and a highly refined, transparent finish.
