The challenge the coffee industry is facing

Coffee is naturally a forest-dwelling plant, with cherries that grow slowly in the shade to develop rich, complex flavors. However, to keep up with global demand, vast swathes of rainforest have been cleared to make way for monoculture "sun plantations." While this is efficient at increasing short-term yields, it severely stresses the plants—which then often require chemical inputs—strips the soil, and destroys natural habitats. Because the cherries are forced to grow faster and under stress, this approach ultimately dilutes the flavor of your brew. Thankfully, not all coffee is grown this way yet, but it is an attribute that is rarely spoken about.

At Live Coffee, we wanted to change that. For us the mission is simple: to promote awareness and make the switch to shade-grown coffee easy and available. We source our beans exclusively from forest environments, partnering with farmers who practice traditional methods that work in harmony with nature.

Broadly, this approach is known as agroforestry—growing coffee beneath a protective shade of trees. We see three core benefits this switch brings to your daily habit:

1. The Palette: Slowly Ripened, Naturally Sweeter

Just like any fruit grown quickly under artificial conditions versus ripening slowly in nature, flavour suffers under stress. Coffee cherries are no different. Under the cool, dappled shade of the forest canopy, the cherries ripen at a much slower pace. This slow journey allows the natural sugars to concentrate, giving your cup a naturally smoother, more vibrant, and complex flavour profile with low bitterness. Both our regular and decaf options are single-origin coffees sourced from Chiapas, Mexico, boasting exceptional SCA cupping scores of 84.

2. The People: Securing a Future for Growers

By championing shade-grown coffee, we support the growers who act as caretakers of their local environments. Shade-grown farms are inherently more resilient to extreme weather, which means more stable livelihoods for farming families. Because of the superior quality of their crop, these coffees command premium prices, which we gladly pay. Furthermore, the diverse forest canopies provide additional food and income sources, offering these communities vital economic resilience. 3. The Planet: A Shield for Biodiversity

When we keep the forest standing, we keep the entire ecosystem alive. The trees block intense heat, providing the natural, cooling microclimate that coffee plants thrive in. Moisture and nutrients in the soil are sustained, and the canopy acts as a sanctuary for migratory birds and local wildlife, which serve as natural pest preventers. It is a self-sustaining form of agriculture that actively fights climate change rather than accelerating it. We call this a Multistrata agroforestry system, describing the multiple layers of canopy working together as one harmonious ecosystem. We named our signature house single-origin roast Multistrata in tribute to this process.
