What is the Mountain Water Process?
Most conventional decaf is stripped of its caffeine using harsh chemical solvents like methylene chloride. We take a different route.
The Mountain Water Process is entirely natural, relying only on water, temperature, and time. It takes place at the specialized DESCAMEX facility in Mexico, using pure glacier meltwater from the country’s highest peak, *Pico de Orizaba*. The unique mineral profile of this mountain water gently removes **99.9% of the caffeine** while locking in the coffee's original characteristics.
How It Works (The Simple Science)
1. The Flavor Bath: A batch of green coffee beans is soaked in pure glacier water. This water draws out everything soluble in the bean—both the caffeine and the precious flavor compounds.
2. The Carbon Filter: The water is separated from the beans and passed through a specialized charcoal filter. This filter acts like a net: it traps the large caffeine molecules but lets the natural flavor compounds pass right through.
3. The Flavor Exchange: Fresh, undecaffeinated beans are introduced to this flavor-saturated water. Because the water is already completely full of coffee flavors, it can't absorb any more. However, because it has no caffeine, the caffeine naturally leaves the new beans and moves into the water.
4. Dry and Roast: The beans are carefully dried back to their perfect moisture level, shipped to us, and roasted to order.
It’s a gentle, natural process based on simple osmosis. The result? A decaf that actually tastes like specialty coffee.
